Summertime brings such wonderful fruits and vegetables from our local farmers market. I love the idea of having a garden but let’s face it – gardens and 2-year-old boys just don’t always work. At this stage of my life I am happy to support our local farmers.
I missed posting about the strawberry picking season, but we have a wonderful local farm that has a pick-your-own strawberry patch. I enjoyed strawberries in smoothies, muffins, breads, desserts, scones, and salads. If you have followed my Facebook page for some time, you will know that I am addicted to the strawberry and avocado pairing. I have always loved avocados, but I discovered the wonderful combination of strawberries and avocados by accident when my friend came over to visit in Texas and she threw together a salad from whatever I had in the refrigerator. If you’ve ever seen the kids’ movie Ratatouille, it is like the scene where the flavors of food combinations come together.
Moving on. Grilling is NOT my expertise. But I do it when I have to and it turns out ok. My favorite thing to grill is Honey Dijon Chicken. It is perfect on a Strawberry Avocado Salad! As is my favorite salad dressing these days, Newman’s Own Olive Oil and Vinegar … adding the perfect tang to this wonderful salad. Here’s a summer recipe to try on your grill. Word of warning from experience: The honey in this marinade makes the flames jump in your grill. You may need a sprayer or lower heat to keep from getting a blackened chicken.
Honey Dijon Chicken
2 pounds of chicken (I use chicken breast)
½ cup apple juice
¼ c olive oil
¼ cup of honey
¼ cup Dijon mustard
½ tsp black pepper
¼ tsp salt
4 cloves garlic
Mix all ingredients except chicken and put in gallon ziplock bag with chicken and let marinade for at least 4-6 hours. Grill and serve on salad of your choice or with a favorite side. My salad had romaine lettuce, strawberries, avocados, carrots, and green peppers.
